More than 20 types of Oryza sativa rice that are high in anthocyanin pigment—the antioxidant pigment that gives eggplants and blackberries their deep color—are referred to as “black rice, also known as purple rice or “forbidden rice.” Black rice is technically a variety of brown or unpolished rice because it is nearly always offered as a whole grain, with the topmost layer of bran still intact.
Because the dark bran has mixed with the white endosperm, cooked or soaked grains seem purple as opposed to raw, uncooked grains, which appear black. Despite having a similar appearance, wild rice, a grain belonging to the genus Zizania, is unrelated to black rice. Rather, it is real rice—an heritage variety that acquired its colour through the same kind of mutation.
